Nghiên cứu rùng mình: 2 loại thức ăn làm biến đổi não bộ

(NLĐO) - Nghiên cứu từ hai đơn vị danh tiếng Max Planck - Yale của Đức và Mỹ chỉ ra cách đáng sợ mà một số loại thức ăn có thể khiến bạn bị lệ thuộc, không khác gì chất gây nghiện.

Theo Medical Xpress, công trình được thực hiện bởi Viện Nghiên cứu trao đổi chất Max Placnk (thuộc Hiệp hội Max Planck - Đức, bao gồm nhiều đơn vị nghiên cứu) và Đại học Yale (Mỹ) cho thấy nếu thực phẩm có hàm lượng đường hoặc béo, hoặc cả hai ở mức cao được tiêu thụ thường xuyên, não bộ sẽ tự học cách đòi hỏi chúng trong tương lai.

Để kiểm tra giả thuyết, nhóm nghiên cứu đã để một số tình nguyện viên ăn một chiếc bánh pudding nhỏ chứa nhiều chất béo và đường mỗi ngày, trong khi nhóm đối chứng ăn bánh có vẻ ngoài giống vậy nhưng ít béo hơn nhiều.

Tất cả họ được theo dõi hoạt động não chuyên sâu trong suốt 8 tuần thử nghiệm.

Kết quả cho thấy phản ứng của não đối với thực phẩm giàu chất béo và đường cao đã tăng lên rất nhiều ở nhóm ăn bánh pudding nhiều đường, nhiều béo.

Điều này do sự kích hoạt hệ thống dopaminergic, khu vực não chịu trách nhiệm về động lực và phần thưởng, đem lại cho bạn cảm giác vô cùng sung sướng và khoan khoái - giống như khi nhận được một phần thưởng mong chờ.

Kết quả là bạn ngày càng nghiện hoạt động khiến cho vùng não đó được kích hoạt, ở đây là việc tiêu thụ những thực phẩm cùng loại - giàu đường và chất béo.

Trong thời gian thử nghiệm, hai nhóm không có sự chênh lệch rõ và mức tăng cân hay các chỉ số sức khỏe khác, tuy nhiên các nhà nghiên cứu cảnh báo rằng thói quen sẽ được duy trì. Nếu lâu dài, chắc chắn cân nặng, mức cholesterol, hệ thống chuyển hóa nói chung... sẽ bị thay đổi nghiêm trọng ở nhóm quen ăn ngọt, béo.

"Các kết nối mới được tạo ra trong não và chúng không tan biến nhanh như vậy. Xét cho cùng toàn bộ quan điểm của việc học là một khi bạn học được điều gì đó, bạn sẽ không quên nó quá nhanh" - tiến sĩ Marc Tittgemeyer, thành viên nhóm nghiên cứu, giải thích.

Theo các tác giả, phát hiện này là lời cảnh báo cho thấy việc "buông lỏng" cơ thể một giai đoạn có thể dẫn đến một thói quen không lành mạnh kéo dài, nhất là khi cơ thể bạn vốn đã có cân nặng, các chỉ số... không được ổn, hoặc thuộc nhóm nguy cơ.

Điều này cũng cho thấy bạn sẽ cần quyết liệt hơn với những cơn thèm ăn đồ ngọt, béo, nếu thực sự muốn thay đổi và cải thiện sức khỏe.

Nghiên cứu vừa được công bố trên tạp chí khoa học Cell Metabolism.
